550gr.apples, peeled and chopped into small pieces
4eggs (size S)
130gr.butter (soft) or margarine
130gr.sugar
250gr.flour
2p.vanilla sugar (or 2 tsp vanilla extract)
1p.baking powder (about 15 g)
50-60gr.melted butter (for topping)
2tbsp.sugar
1tspcinnamon

Instructions
Peel and chop the apples into small pieces. Optionally drizzle with a bit of lemon juice to prevent browning.In a large bowl, mix the eggs, sugar, vanilla sugar and soft butter until light and fluffy.Gradually add the flour and baking powder while mixing continuously until a smooth batter forms.Preheat the oven to 180°C fan (or 200°C top and bottom heat).Add the chopped apples to the batter and mix gently.Pour the mixture into a baking tin lined with parchment paper and lightly greased.Bake for about 50–60 minutes.Ten minutes before it’s ready, take the cake out, pour over the melted butter, and sprinkle with cinnamon sugar.Return to the oven for another 10–15 minutes until golden and fragrant.Let it cool completely, then dust generously with powdered sugar before serving.Enjoy your soft, buttery and aromatic apple cake!
